- Nopal (cactus paddle). Some places sell the paddles already without the prickles. If you can only get the nopales with the prickles on, check out How to Clean Nopales and follow up to step number 4.
- Salt. Using coarse salt is better than using Kosher salt or regular table salt. The larger grains of coarse salt provide more friction when rubbing the nopales, which helps to break down and remove the slimy mucilage more effectively than finer grains of regular salt. However, if you only have Kosher or regular salt, it will also work.
How to Make Nopal (cactus paddle) salad recipe without heat-cooking. Step by step.
This is a quick overview of how to make this recipe. For ingredients and more detailed instructions, check out the recipe card below.
Step 1. If you buy the nopales paddles with prickles on, please check out How to Clean Nopales post and follow up to step number 4.
Step 2. To a medium-sized bowl, add in the diced-up nopales with the salt. Toss by hand for 3 minutes.

Step 3. Sit a colander on top of a bowl and place the nopales in the colander to rest for 30 minutes.

Step 4. After resting time, discard the slimy liquid. Rinse the nopales under running water.

Step 5. Remove any excess water from the nopales. Add them to a bowl along with the cherry tomatoes, onion, cotija cheese, cilantro, and oregano. Toss to combine.

Step 6. Add in salt to taste and extra virgin olive oil. Toss to combine.
Step 7. Eat by itself, with tortilla chips, or served in a tostada.

Recipe Tips
- Resting time. After tossing the nopales with salt, do not skip the resting time since it's essential to remove as much slimy liquid or baba as possible.
- Cherry Tomatoes. It's recommendable to use cherry tomatoes in this recipe since they have less water than regular tomatoes. If you only have regular tomatoes in hand, remove the pulp and seeds which would make this recipe otherwise watery. Do not throw away the pulp and seeds. Use them later for making a soup, for example.
- Make ahead: If storing, keep the dressing separate until ready to serve.
Storage
To keep your Nopal (cactus paddle) salad fresh, store it in an airtight container in the refrigerator and consume it within 2-3 days.
If prepping ahead, store the dressing separate from the salad and add in the dressing to the salad just before eating to keep the freshness of the salad.
Freezing. This salad is not recommended for freezing as it contains delicate ingredients like tomatoes and cilantro that when thawed, they can become mushy.

Instructions
Clean the Nopales
- If you buy nopales with prickles, pinch the bottom of each nopal with a fork.
- Using a knife, carefully remove the prickles and black spots from both sides of the paddle.
- Cut off the edges and the bottom of the nopal to ensure no prickles remain.
- Rinse each cleaned paddle under running water, shake off excess water, and cut into strips, then dice them. Repeat this process with each nopal paddle.
Remove the Sliminess
- Place the diced nopales in a medium-sized bowl and add 2 tablespoons of coarse salt.
- Toss the nopales by hand for 3 minutes, ensuring each piece is coated with salt.
- Set a colander over a bowl and place the salted nopales in the colander. Let them rest for 30 minutes to allow the slimy liquid to drain into the bowl.
- After 30 minutes, discard the collected slimy liquid. Rinse the nopales under running water, agitating them constantly to remove any excess salt.
- Shake off excess water and pat the nopales dry with a paper towel.
Assemble the Salad
